Now Ramadan is over and the sun’s rays are less fierce, it’s time to get out and barbecue.
One of the setbacks is the lack of puddings that can be successfully achieved on the barbecue grill. This one is a bit sticky and messy to prepare, but yummy enough to be worth it.
Buy some mini marshmallows and mix with some broken pieces of a respectable brand of chocolate - Godiva or similar would be a great choice.
Layer the mixture between two good quality plain biscuits, then wrap in foil and barbeque the packages for a few minutes until the point of mallow and chocolate meltdown.
For a bit of variety, you can add a slice of mango between the biscuits.
Serve with ice cream - a flavour with summer berries makes a tasty contrast, but plain vanilla will do nearly as well.
